The White opens with softer, creamier aromatics: white and milk chocolate, warm toffee, a suggestion of condensed cream and salted caramel. Beneath these, the same browned butter foundation as the Original, now lifted rather than grounded.
The dough, rested overnight in a cold sea house kitchen, gives the cookie its structure and chew. The chocolate, broken from the bar, rather than poured from a bag, melts into pools rather than pieces, giving depth and intensity on the palate. A long, salted finish with lingering warmth. Best experienced still slightly warm, at a window facing the sea.
